Endive is classified as salad plants. It produces elongated heads of white-yellow colour and of specific refreshing and slightly bitter taste.
Endive features many health and nutritive properties, contains plenty of vitamins, including among others A, E, C and K as well as B group vitamins. It is also rich in minerals, such as potassium, selenium, magnesium, iron, mercury, zinc, calcium, phosphorus and sulphur and contains also beta-carotene, fibre and folic acid.
It should be consumed by persons tackling high cholesterol level and diabetes as well as breastfeeding women, since endive has a lactogenic effect. It is also considered to be a caffeine-free substitute of coffee.
Endive maintains vast majority of its health claims when consumed raw, added to salad. A perfect match for nuts, vinaigrette sauce, fruits, cold meats and cheese.
