Tomato is a thermophillic plant originating from South America. In temperate climate zones, it is cultivated as an annual plant. At present, tomatoes are commonly grown all over the world. There are many cultivars differing in colour, shape and size of fruits available on the market.
Tomatoes are known as a rich source of potassium as well as vitamins: C and E and beta-carotene. They contain lycopene i.e. organic chemical compound being the most powerful antioxidant from among carotenoids.
Tomatoes are consumed in many forms, most frequently as an ingredient of soups, sauces and salads.
Their composition makes them the only vegetables being equally or even more valuable after processing than fresh. That is why they are widely used in food processing to produce juices, purees and concentrates.
